A high capacity proving room has been specially developed to guarantee an even flow of steam throughout the chamber. An evaporator and heater are disposed within the base adjacent the outlet and a circulating fan draws air from within the chamber through the outlet and duct and blows the air across the heater and evaporator and into the inlet into the interior. Once the moisture is deposited on the bakery goods it will remain the entire steam exposure period and will not be picked up by dry hot air. It results shiny and soft product. This is an essential prerequisite to guaranteed quality baked products with optimum bread and a smooth glossy crust.
