Bacillus cereus, a kind of bacteria that can lead to food poisoning, may be present in uncooked rice in the form of spores. Even after the rice has been cooked, the spores can live on. If rice is allowed to sit out at room temperature for an extended period of time, the spores can develop into bacteria. These bacteria will proliferate and can produce toxins that will make the patient throw up or have diarrhoea.
