Yeast is a fungus with 1,500 recognized species. Saccharomyces cerevisiae – the baker’s yeast, is produced by fermentation of carbohydrates that converts it to alcohol & CO2. Marine yeasts produce amino acids, enzymes, vitamins, etc., with vast application.
